Method

  1. 1 Mix the chopped shrimp with the minced pork, soy sauce, sesame oil, and pepper, then knead for 3 minutes until the filling is firm.
  2. 2 Wrap the filling in the wonton wrapper, and pinch the bottom part together to make it compact.
  3. 3 Simmer chicken broth with dried shrimp and ginger for 15 minutes until flavorful, then strain.
  4. 4 Boil the wontons in a separate pot of boiling water for 3 minutes, until they float to the surface.
  5. 5 Blanch the egg noodles for exactly 40 seconds, then rinse with cold water to make them crispy. Blanch the Chinese broccoli for 2 minutes.
  6. 6 Arrange the noodles at the bottom of the bowl, place the wontons and Chinese broccoli on top, pour in the hot broth, and sprinkle with chopped scallions.

With an appliance

  • Microwave 48 min

Replace step 4: Arrange the wontons in a single layer in a bowl of boiling water, cover loosely, and microwave at 800W for 2 minutes; reduce this by about 1 minute so the filling cooks evenly and the wrappers don't tear due to less impact. Keep the noodles and vegetables blanched separately.
