What to get ready

• Flour 1.2 kg

• Cinnamon powder 24 g
• Cloves 12 g
• Orange 4
• Pine nuts 120 g

Method

1. 1 Heat the honey until warm, then knead it with flour, cinnamon, cloves, and orange peel for 15 minutes.
2. 2 Using only honey as a sweetener and no eggs or butter, that's the old Calabrian version.
3. 3 Wrap the dough in a towel and let it rest for 12 hours to make it easier to shape.
4. 4 Roll out the dough to a thickness of 1 cm, then cut it into human, fish, and flower shapes using the molds.
5. 5 Attach pine nuts for eyes and decoration, then let the surface dry for 30 minutes.
6. 6 Bake at 170 degrees for 20 minutes until the cake is firm; this cake will be hard and keep for months.

  Replace step 6: lightly spray oil onto the honey cake, bake in a 185-degree steam oven for 13 minutes and flip after 7 minutes; the crust hardens faster than in a conventional oven, arrange in a single layer so the decorations don't bump into each other.
