Method
- 1 Mix achiote with orange juice and marinate the diced chicken and pork for 20 minutes.
- 2 Cook the meat with chopped tomatoes for 25 minutes, then drain and set aside the broth.
- 3 Dissolve 30g of masa powder in the meat broth, simmer for 6 minutes until thickened into a k'ol sauce to prevent the filling from drying out in the oven.
- 4 Mix the remaining masa flour with the lard, then divide it into two parts to make the base and the lid of the pie.
- 5 Line a baking sheet with banana leaves, spread a 2 cm thick layer of dough, arrange the meat and k'ol sauce on top, cover with dough, wrap tightly, and bake at 180 degrees for 1 hour and 30 minutes.

Replace step 5: divide the dough into two portions in the leaf-wrapped basket, spray the outside of the leaves with oil, and bake in a 195-degree hot air oven for 60 minutes, flipping the portions at 30 minutes. This variation is half an hour faster than baking in a conventional oven, but requires dividing into batches due to the smaller size of the oven.
