Mulitas

40 min Hands-on time + 2 hr soaking or marinating first
EasyDifficulty
6 stepsSteps

Method

  1. 1 Marinate the sliced beef with lemon juice and salt for 2 hours, then grill it in a cast iron skillet for 2 minutes on each side.
  2. 2 Chop the meat finely on a cutting board after grilling, not beforehand.
  3. 3 Place the cheese on one corn tortilla, then add the meat, and then place a second tortilla on top.
  4. 4 Mulitas uses two small corn tortillas stacked on top of each other, unlike gringas which uses two large wheat tortillas.
  5. 5 Pan-fry for 2 minutes on each side until the cheese melts and the edges are crispy.
  6. 6 Grilled tomatillo with jalapeño, then mashed into a green sauce, served with onions, cilantro, and lime.

With an appliance

  • Air fryer 39 min

Replace step 5: lightly spray both sides of the mulitas with oil, air fry at 190 degrees for 6 minutes, flip at the 3rd minute to melt the cheese and crisp the edges of the corn tortillas; keep step 6 unchanged.
