What to get ready

  • Photograph of Flour Flour 1.1 lb
  • Photograph of Lamb Lamb 1.2 lb
  • Photograph of Chicken eggs Chicken eggs 8
  • Photograph of Leek Leek 8.5 oz
  • Photograph of Spring onion Spring onion 4.2 oz
  • Photograph of Baharat spice blend Baharat spice blend 0.4 oz
  • Photograph of Oil Oil 1 cups
  • Photograph of Chilli Chilli 4
  • Photograph of Salt Salt 0.6 oz

Method

  1. 1 Knead the flour with water and salt for 12 minutes, then divide into balls, grease with oil, and let rest for 2 hours.
  2. 2 Pull each pellet into a thin, translucent sheet on the oil-smeared table.
  3. 3 Sauté the minced lamb with leeks, scallions, and baharat for 10 minutes, then let cool and mix in the beaten eggs.
  4. 4 Place the filling in the center of the dough sheet, then fold the four edges to form a sealed square package — the egg in the filling acts as a binder and should not be removed.
  5. 5 Pan-fry in oil for 4 minutes on each side until golden brown and crispy, then cut into squares.

With an appliance

  • Air fryer 55 min

Step 5: Brush oil on both sides and bake at 195 degrees for 12 minutes, turning at the 7th minute. The crust will be crispier but less puffed, so brush with a thicker layer of oil than usual.
