Method

  1. 1 Slice the beef into thick strips along the grain so that it doesn't break into pieces when drying.
  2. 2 Marinate with fish sauce, sugar, pepper, cumin seeds, and crushed coriander roots.
  3. 3 Sun-dry for 6 hours until the outer surface is slightly firm; the meat should remain chewy, not crispy.
  4. 4 Deep-fry for 4 minutes; frying the beef for too long will make it tough like beef jerky.
  5. 5 Drain off excess oil and serve with jaew sauce and sticky rice.

With an appliance

  • Air fryer 34 min

    Replace step 4: spray oil evenly over the air-dried beef strips, fry at 190 degrees for 8 minutes, flipping at the 4th minute; do not fry longer to prevent the beef from becoming tough.
