What to get ready

  • Photograph of Sliced sandwich bread Sliced sandwich bread 8 slices
  • Photograph of Red bean Red bean 1.3 lb
  • Photograph of Unsalted butter Unsalted butter 5.6 oz
  • Photograph of Sugar Sugar 11.3 oz
  • Photograph of Fresh cream Fresh cream 1 ⅓ cups
  • Photograph of Salt Salt 0.3 oz

Method

  1. 1 Cook red beans until tender, then mix with sugar to form anko (red beans) in whole bean form.
  2. 2 Choose slices of bread that are 3 cm thick, not thin; that's the Nagoya style of bread.
  3. 3 Bake the slices of bread for 4 minutes until both sides are golden brown and crispy, while the inside remains soft.
  4. 4 Spread a thick layer of unsalted butter on the still-warm slice of bread, allowing the butter to melt into the center.
  5. 5 The secret is to spread butter while the bread is still warm; when it cools down, the butter will only be on the surface.
  6. 6 Spread the red bean paste on top, then sandwich it with another slice or leave it open with whipped cream.

With an appliance

  • Air fryer 18 min

Replace step 3: steam in a 190-degree air fryer for 5 minutes; this method results in a crispier and more even crust compared to oven baking.
