Method
- 1 Soak the rice and urad beans for 6 hours, then grind them and let them ferment for 8 hours to create the dough.
- 2 Make the batter thicker than dosa because uttapam needs to be thick like sponge cake, not thin and crispy.
- 3 Pour the batter into the pan in an 8 mm thick circle without spreading it thinly.
- 4 Sprinkle a generous amount of chopped onion over the wet dough and press gently to make it stick.
- 5 Sprinkling the onions on top of the wet batter is mandatory; sprinkle them after the batter has set so that all the onions fall out.
- 6 Drizzle sesame oil around the edges and fry for 4 minutes, then flip and fry for another 2 minutes.

Replace step 6: Place the onion-sprinkled pastry in the oiled mold, air fry at 185 degrees for 10 minutes, and flip at the 6th minute so the onion touches the pastry side. Maintain the 8 mm thickness and the method of sprinkling the onion while the batter is still wet as in steps 3 and 4.
