Osmanthus jelly

40 min Hands-on time + 4 hr soaking or marinating first
EasyDifficulty
6 stepsSteps

Method

  1. 1 Soak dried osmanthus flowers in warm water for 10 minutes, then drain off the first soaking water.
  2. 2 Draining the first batch of soaking water removes the bitter taste, leaving behind the jelly with its earthy smell.
  3. 3 Boil water with rock sugar and agar for 5 minutes until the agar is completely dissolved.
  4. 4 Add the osmanthus flowers and goji berries, then turn off the heat immediately; cooking the flowers will cause their fragrance to dissipate.
  5. 5 Pour into molds and let cool at room temperature before refrigerating.
  6. 6 Allow it to cool gradually before refrigerating for 4 hours; shock freezing will cause the jelly to separate.

With an appliance

  • Microwave 37 min

Replace step 3: swirl the sugar syrup and agar in a deep bowl at 800 W for 3 minutes, stopping stirring after each minute and measuring to ensure the mixture reaches at least 90 degrees; the agar dissolves more quickly than heating on the stove for about 2 minutes and doesn't stick to the sugar. The osmanthus flowers and goji berries from step 4 should still be added only after heating has stopped to preserve their aroma.
