What to get ready

  • Photograph of Flour Flour 1.2 lb
  • Photograph of Dry yeast Dry yeast 0.4 oz
  • Photograph of Thick tomato passata Thick tomato passata 1 ⅔ cups
  • Photograph of Salted anchovies Salted anchovies 2.8 oz
  • Photograph of Pecorino cheese Pecorino cheese 4.9 oz
  • Photograph of Onion Onion 2
  • Photograph of Bread Bread 3.5 oz
  • Photograph of Olive oil Olive oil ½ cup

Method

  1. 1 Knead the dough until it's wetter than usual, then let it rise for 4 hours in a greased rectangular baking tray.
  2. 2 Press the dough down to cover the entire tray, and let it rise for another 30 minutes to create a thick and fluffy base.
  3. 3 Cook the tomato sauce with thinly sliced onions until it's sweet and thick.
  4. 4 Spread the sauce on the base, then sprinkle with salted anchovies and Pecorino cheese.
  5. 5 Sprinkle breadcrumbs mixed with olive oil on top, bake at 220 degrees for 25 minutes until crispy.

With an appliance

  • Air fryer 40 min

Replace step 5: spray a thin layer of oil onto the sides of the mold, use a 235-degree hot air oven for 16 minutes, rotating the tray at minute 8. The strong airflow shortens the time by about one-third compared to a conventional oven and browns the surface faster.
