Method

  1. 1 Knead the dough with cold butter and ice water, then refrigerate for 1 hour.
  2. 2 Roll out the dough in the mold and bake for 18 minutes with a heavy layer of beans on top.
  3. 3 Sauté the thinly sliced onions for 20 minutes until they turn brown and sweet, then fry the bacon.
  4. 4 Sautéing onions until they turn brown is a distinctive feature of the Alsace version; quickly sautéing onions results in bland bread.
  5. 5 Beat the eggs with the fresh cream and nutmeg, then strain through a sieve.
  6. 6 Spread the onions, meat, and gruyère into the pastry shell, then pour in the egg mixture and bake at 180 degrees for 35 minutes.

With an appliance

  • Air fryer 1 hr 10 min

Replace the baking step in step 6: spray the tart rim with oil, run the oven on high heat at 195 degrees for 23 minutes and rotate the mold at minute 12; the custard will set quickly, do not flip, and use a small mold.
