Method

  1. 1 Cut the water spinach into 8 cm pieces, wash thoroughly, and drain completely.
  2. 2 Heat a pan until very hot, add oil, then sauté minced garlic for 20 seconds until lightly golden.
  3. 3 Add the stems of the vegetables to the pan and stir-fry over high heat for 1 minute, then add the leaves.
  4. 4 Season with salt and sugar, pour Shaoxing wine along the sides of the pan, then stir quickly for 1 minute.
  5. 5 Serve the vegetables on a plate while they are still green and crisp.
