Method

  1. 1 Beat the flour with yeast, eggs, and milk using a mixer for 15 minutes until the dough is elastic and glossy.
  2. 2 Add the softened butter little by little, then beat for another 10 minutes and let it rest for 2 hours.
  3. 3 Pour the batter into the ring mold, filling it only halfway, then let it rise for another hour.
  4. 4 The cake is baked in a ring mold, so the center is hollow to hold the cream and fruit; that's what makes it different from Baba's.
  5. 5 Bake at 190 degrees for 25 minutes, then let cool completely for 2 hours.
  6. 6 Soak the cooled cake in rum syrup for 20 minutes, then layer whipped cream and strawberries in the center.

    Replace step 5: spray mold with savarin oil, run the steam oven at 205 degrees for 16 minutes and rotate the mold at minute 8; the cake rings quickly to absorb the syrup, large molds must be divided into batches.
