  • Photograph of Dry yeast Dry yeast 0.4 oz
  • Photograph of Onion Onion 4
  • Photograph of Salted anchovies Salted anchovies 3.5 oz
  • Photograph of Thick tomato passata Thick tomato passata 1 ⅔ cups
  • Photograph of Bread Bread 4.2 oz
  • Photograph of Pecorino cheese Pecorino cheese 4.2 oz
  • Photograph of Olive oil Olive oil ⅔ cup

Method

  1. 1 Knead the dough until it's very wet, then let it rise for 4 hours; the dough should be fluffy like a sponge.
  2. 2 Sauté a generous amount of thinly sliced onions over low heat for 25 minutes until they are tender and golden brown.
  3. 3 Mash the salted anchovies with the onions until dissolved, then add the tomato sauce and cook until thickened.
  4. 4 Spread the batter in a baking tray, cover with the onion and tomato mixture, and sprinkle with Pecorino cheese.
  5. 5 Sprinkle breadcrumbs mixed with oil on top, then bake at 200 degrees for 30 minutes.

With an appliance

  • Air fryer 50 min

Instead of step 5: spray a thin layer of oil onto the sides of the mold, use a 215-degree hot air oven for 20 minutes, rotating the tray at minute 10. The strong airflow shortens the time by about one-third compared to a conventional oven and browns the surface faster.
