Method

  1. 1 Cut the potatoes into 1 cm strips and soak them in water for 20 minutes to remove the starch from the surface.
  2. 2 Fry the potatoes once at 150 degrees for 7 minutes, then remove and let cool completely.
  3. 3 Frying twice with a complete cooling period is the only way to achieve crispy on the outside and soft on the inside of the fries.
  4. 4 Pat the meat dry and sear in a very hot cast iron skillet for 3 minutes on each side, adding butter, garlic, and thyme at the last minute.
  5. 5 Let the meat rest on the rack for 8 minutes before slicing; slicing immediately will allow the juices to drain away.
  6. 6 Fry the potatoes a second time at 190 degrees for 3 minutes, then sprinkle with coarse salt and serve with Dijon mustard.

With an appliance

  • Air fryer 40 min

    Replace steps 2 and 6 for the potatoes: steam in a hot air pot at 200 degrees for 22 minutes, shake the basket three times, spray with 15 ml of oil; the meat remains pan-fried.
