Method

  1. 1 Heat the honey until it simmers, then mix it with almond flour, orange zest, and cinnamon.
  2. 2 Sprinkle flour and baking powder onto the dough, knead for 8 minutes until a thick dough forms, and let it rest for 1 hour.
  3. 3 Roll the dough into a 2 cm thick strip, then cut it into 14 cm lengths.
  4. 4 Each piece is bent into an S shape, the S-shape being the distinguishing feature of susamielli among Neapolitan Christmas pastries.
  5. 5 Press an almond into each end of the letter S, then brush with orange blossom water.
  6. 6 Bake at 170 degrees for 18 minutes, then let cool completely; the cake will firm up and is best after three days.

    Replace step 6: lightly spray oil on the S-shaped pastry, cook at 185 degrees in a hot air oven for 12 minutes and flip after 6 minutes; honey darkens quickly, layer only one layer at a time.
