Method

  1. 1 Grill the poblano peppers over low heat for 8 minutes, then peel and cut them into strips.
  2. 2 Sauté the onions with the poblano peppers and seeded tomatoes for 6 minutes until the mixture is dry.
  3. 3 Sauté the shrimp for 90 seconds, then season with chili powder and lemon juice.
  4. 4 Pressing the tortilla in butter instead of heating it dry is the hallmark of a Mazatlán taco gobernador.
  5. 5 Sprinkle shredded Oaxaca cheese onto half of the buttered pastry, then arrange the shrimp filling on top.
  6. 6 Fold the pastry in half and press for another 90 seconds on each side to melt the cheese and crisp the crust.

With an appliance

  • Air fryer 34 min

    Replace step 6: spray oil and then brush a thin layer of butter on both sides of the folded tacos, fry in an air fryer at 190 degrees for 6 minutes, flip at the 3rd minute to melt the cheese and crisp the tortilla edges; steps 1 to 5 remain the same.
