What to get ready

  • Photograph of Roasted sesame seeds Roasted sesame seeds 1.3 lb
  • Photograph of Olive oil Olive oil ⅔ cup
  • Photograph of Salt Salt 0.4 oz
  • Photograph of Lime Lime 2
  • Photograph of Garlic Garlic 4 cloves
  • Photograph of Cumin seeds Cumin seeds 0.1 oz

Method

  1. 1 Toast white sesame seeds in a dry pan for 6 minutes over low heat, stirring constantly, until the seeds are light golden brown and easily loosened.
  2. 2 Let the sesame seeds cool completely before grinding; if they are still hot, they will release oil too quickly and the sauce will taste bitter.
  3. 3 Grind the sesame seeds alone for 3 minutes, let the machine rest for 1 minute, then grind again until the powder flows smoothly.
  4. 4 Pour olive oil spoonful by spoonful into the running machine to ensure a smooth, non-separating sauce.
  5. 5 Season with salt, lemon juice, crushed garlic, and cumin; the sauce thickens when mixed with water, so dilute it with cold water spoonful by spoonful before serving.
