  • Photograph of Gelatin powder Gelatin powder 0.4 oz
  • Photograph of Sugar Sugar 4.2 oz
  • Photograph of Ginger Ginger 1.7 oz
  • Photograph of Roasted peanuts Roasted peanuts 1.1 oz

Method

  1. 1 Soak soybeans in cold water for at least 6 hours or overnight until softened, then rinse off the hulls.
  2. 2 Grind the soybeans with water and then strain through a cloth bag to obtain a smooth soy milk.
  3. 3 Simmer the soy milk over medium heat for 10 minutes, skimming off the foam continuously and stirring constantly to prevent it from burning at the bottom of the pot.
  4. 4 Dissolve the gelatin in a little cold water until it swells, then pour it into a large bowl. Pour hot soy milk over it in one decisive motion from above, cover, and let it sit for 40 minutes until it sets smoothly.
  5. 5 Simmer sugar with sliced ginger and water over low heat for 10 minutes to make fragrant ginger syrup.
  6. 6 Using a thin ladle, scoop slices of tofu pudding into a bowl, pour ginger syrup over it, and sprinkle with roasted peanuts.

With an appliance

  • Microwave 35 min

Replace step 3: Heat the soy milk in a very large bowl at 600 W for 8 minutes, stirring and skimming off any foam every 2 minutes to ensure the milk cooks without overflowing. Keep steps 4 to 6 the same.
