Frog Stir-Fried with Garlic and Vinegar

EasyDifficulty
5 stepsSteps

Method

  1. 1 Cut the frog into 3 cm pieces, then toss with salt and vinegar for 5 minutes, and rinse to remove the slime.
  2. 2 Marinate the frog meat with cornstarch and pepper for 10 minutes to prevent it from releasing too much water when stir-frying.
  3. 3 Sauté half of the garlic until golden brown, then remove and sprinkle on top when serving.
  4. 4 Sauté the frog legs over the highest heat for 5 minutes; frog meat softens quickly, so it will become tough if cooked for more than 6 minutes.
  5. 5 Drizzle vinegar along the sides of the pan, season with fish sauce, then sprinkle with fried garlic and green onions.
