Method

  1. 1 Marinate the chopped duck pieces with crushed ginger and fish sauce for 20 minutes.
  2. 2 Peel the gourd, cut it into 3 cm cubes, and remove the tough seeds.
  3. 3 Fry the duck skin-down for 8 minutes, then stir-fry for another 8 minutes until the meat is browned.
  4. 4 Add the zucchini to the pan and stir-fry over high heat for 4 minutes without adding water.
  5. 5 The gourd naturally releases a lot of water, so adding more water will make the dish as watery as soup.
  6. 6 Adjust the seasoning with fish sauce, then sprinkle with fried garlic, green onions, chili peppers, and black pepper.
