Method

  1. 1 Remove the skin and bones from the fish, then mash it thoroughly with red curry sauce and egg.
  2. 2 Continue kneading in one direction until the mixture becomes pliable, sticky, and adheres to your hands.
  3. 3 Mix in the thinly sliced long beans and finely chopped Thai lime leaves.
  4. 4 Grease your hands with oil and shape the mixture into flat, round patties.
  5. 5 Deep-fry at 160 degrees until puffed up and golden brown, then serve with Thai sweet chili sauce.

    Replace step 5: spray oil on both sides of the fish cakes, fry at 180 degrees for 11 minutes, flip at the 6th minute; shape into flat patties so that the fish cakes expand without drying out.
