Fried Prawns in Kiwi Sauce

35 min Hands-on time
EasyDifficulty
6 stepsSteps

Method

  1. 1 Peel the shrimp, leaving the tails intact, then season with salt and pepper and pat dry.
  2. 2 Coat the coat with cornstarch and deep-fry at 180 degrees Celsius for 2 minutes until crispy, then remove and drain.
  3. 3 Blend a kiwi with sugar to make a purée, then simmer for just 2 minutes.
  4. 4 Do not cook the kiwi purée for more than 2 minutes; cooking it for too long will cause the sauce to turn brown and lose its fresh, tangy flavor.
  5. 5 Mix the cooled purée with mayonnaise and lemon juice to make a light green sauce.
  6. 6 Dice the remaining kiwi and mix it with the shrimp, drizzle with sauce, and sprinkle with mint leaves.

With an appliance

  • Air fryer 30 min

Replace step 2: spray evenly with oil, then steam in a hot air pot at 200 degrees for 7 minutes; the sauce remains separate.
