Method

  1. 1 Mix the flour with the cold butter using your fingertips until crumbly, then add the eggs and sugar, and let it rest in the refrigerator for 1 hour.
  2. 2 To make cream: heat the milk with lemon zest, whisk the egg yolks with sugar and flour, then pour in the milk and stir.
  3. 3 Heat until the cream thickens, then cover tightly with plastic wrap and let cool.
  4. 4 Roll out two portions of dough, line one portion in the mold, pour in the cream, and then cover with the remaining dough.
  5. 5 Sprinkle pine nuts on top, bake at 180 degrees for 40 minutes, then let cool and sift with powdered sugar.

With an appliance

  • Air fryer 1 hr 30 min

    Replace step 5: spray a thin layer of oil onto the sides of the mold, use a 195-degree hot air oven for 26 minutes, and rotate the tray at minute 13. The strong airflow shortens the time by about one-third compared to a conventional oven and browns the surface faster.
