Method
- 1 Mix the rice flour with tapioca flour, sugar, and water, then strain it through a sieve twice.
- 2 Double filtration is mandatory; if there are still particles in the substrate, it means the cake has air holes and an uneven, rough surface.
- 3 Divide the paste into two parts and mix the matcha into one part.
- 4 Pour the white glaze into the mold and steam for 12 minutes until the glaze sets.
- 5 Pour a layer of matcha paste over the mixture, then sprinkle with the candied red beans and steam for another 25 minutes.
- 6 Allow to cool completely in the mold for 3 hours before removing and cutting with a wet knife.
With an appliance
-
Pressure cooker 45 min
Replace steps 4 and 5: place the mold on a rack, steam under low pressure for 8 minutes for the white layer, pour in the matcha layer and steam for another 14 minutes, then release pressure naturally for 5 minutes. Step 6: let the cake cool completely in the mold before cutting.
