Method

  1. 1 Cut the stale bread into small cubes, pour warm fresh milk over it, and let it sit for 20 minutes to soften.
  2. 2 Sauté chopped onions with finely chopped speck for 5 minutes, then let cool.
  3. 3 Mix the bread with the eggs, flour, speck, parsley, and salt until you have a smooth dough.
  4. 4 Shape into small balls about the size of ping-pong balls, then drop into simmering chicken broth for 15 minutes.
  5. 5 Ladle the canederli into a bowl along with the broth, and sprinkle with grated cheese and parsley.

    Replace step 4: Arrange the canederli cubes in a single layer in a deep dish with a ladle of broth, cover loosely, and microwave at 700 W for 7 minutes, turning the cubes at the 4th minute. Heat the remaining broth and pour it over the dish during step 5.
