Method

  1. 1 Cook chopped water chestnuts with sugar for 12 minutes, then mix in roasted glutinous rice flour and pork fat to form a soft, translucent filling.
  2. 2 Let the filling sit in the refrigerator for 1 hour to thicken enough to wrap without leaking during baking.
  3. 3 Wrap the filling in puff pastry and flatten it to a thickness of 1 cm.
  4. 4 Make two parallel cuts on the surface to allow the air to escape; if the cuts are missing, the puff pastry will burst and lose its shape.
  5. 5 Brush with egg wash, sprinkle with sesame seeds, then bake at 200 degrees for 22 minutes until the crust is golden brown and separates.

With an appliance

  • Air fryer 50 min

    Replace step 5: spray a thin layer of oil onto the sides of the mold, use a 215-degree hot air oven for 14 minutes, rotating the tray at minute 7. The strong airflow shortens the time by about one-third compared to a conventional oven and browns the surface faster.
