What to get ready

  • Photograph of Pork ribs Pork ribs 1.6 lb
  • Photograph of Winter melon Winter melon 2.2 lb
  • Photograph of Goji berries Goji berries 1.1 oz
  • Photograph of Dried lotus seeds Dried lotus seeds 3.5 oz
  • Photograph of Ginger Ginger 1.4 oz
  • Photograph of Dried tangerine peel Dried tangerine peel 0.4 oz
  • Photograph of Salt Salt 0.6 oz
  • Photograph of Spring onion Spring onion 2.8 oz
  • Photograph of Steamed rice Steamed rice 1.8 lb

Method

  1. 1 Blanch the ribs for 3 minutes, then rinse them clean and simmer them with 1.2 liters of water, ginger, and orange peel for 40 minutes.
  2. 2 Leave the peel of the winter melon intact and only lightly scrape off the white powdery layer; people in Guangdong believe that the peel has a cooling effect, so they don't remove it.
  3. 3 Add the diced winter melon and lotus seeds and simmer for another 30 minutes.
  4. 4 Add the goji berries during the last 8 minutes of cooking; the longer they simmer, the softer they become, making for a delicious sour soup.
  5. 5 Season with salt and sprinkle with chopped scallions; the broth should be clear and have a sweet aftertaste, not cloudy.

With an appliance

  • Pressure cooker 50 min

Replace steps 1 and 3: simmer the ribs for 22 minutes under high pressure, then release the pressure, add the winter melon and lotus seeds, and cook with the lid open for 15 minutes to prevent the winter melon from becoming mushy.
