What to get ready

  • Photograph of Rice flour Rice flour 600 g
  • Photograph of Peeled mung beans Peeled mung beans 280 g
  • Photograph of Spring onion Spring onion 160 g
  • Photograph of Oil Oil 1.8 l
  • Photograph of Salt Salt 24 g
  • Photograph of Black pepper Black pepper 12 g
  • Photograph of Sesame sauce Sesame sauce 80 g

Method

  1. 1 Soak peeled mung beans for 6 hours, then grind them with water to make a thick paste.
  2. 2 Mix the mung bean paste with rice flour, chopped scallions, and salt until you have a thick, creamy paste.
  3. 3 Scoop the mortar into a flat iron ladle, then use the tip of the spoon to make a round hole in the center.
  4. 4 The hole in the middle is a sign of doneness; if the hole is missing, the center will not cook through while the outside will be burnt.
  5. 5 Dip the entire ladle into 175-degree oil so the cake will detach itself from the ladle.
  6. 6 Fry for 4 minutes until the edges are puffed up and crispy, then drain and sprinkle with sesame sauce and pepper.

With an appliance

  • Air fryer 45 min

Do not use a hot air boiler for thin paste; only apply after pre-forming and freezing, 195°C for 12 minutes.
