  • Photograph of Honey Honey 320 ml

  • Photograph of Pine nuts Pine nuts 60 g

Method

  1. 1 Rub the pomelo with coarse salt, then rinse thoroughly and blanch in boiling water for 20 seconds.
  2. 2 Cut the peel into thin strips and squeeze out the juice, discarding all the seeds because the seeds make the jam bitter.
  3. 3 Mix the shredded fruit peel with fruit juice, sugar, and honey in a ratio of one part fruit to one part sugar.
  4. 4 Place in a glass jar and refrigerate for 7 days; the sugar will draw water from the peels, turning them into a thick syrup.
  5. 5 This is a jam made from soaked fruit, not brewed tea; it shouldn't be boiled because boiling will destroy the essential oil aroma of the peel.
  6. 6 Mix two tablespoons of jam with 80-degree hot water, then sprinkle a few pine nuts on top.
