Method

  1. 1 Blanch the chopped chicken pieces in boiling water for 3 minutes, then rinse off the foam.
  2. 2 Arrange the chicken, fresh ginseng, goji berries, shiitake mushrooms, and ginger in a steamer with a central tube.
  3. 3 Not a single drop of water is poured into the pot; this is the rule of Yunnan steam boilers.
  4. 4 This version is simmered with ginseng and goji berries, resulting in a sweet, fragrant broth with a medicinal aroma.
  5. 5 Place the pot over a pot of boiling water, cover tightly, and simmer for 3 hours.
  6. 6 Steam passing through the central pipe condenses into a clear broth, seasoned with salt before serving.

With an appliance

  • Pressure cooker 1 hr 30 min

Replace step 5: Place the pot with the ingredients arranged on a rack along with the minimum amount of water required for a pressure cooker, cook under high pressure for 45 minutes, then release the pressure naturally for 20 minutes. Keep step 3 unchanged: Do not pour water into the pot containing the chicken so that the steam condenses into a clear broth.
