Method
- 1 Bring 350 ml of water with salt to a rolling boil, then sprinkle in the flour all at once and do not stir for the first 30 seconds.
- 2 Using a wooden mallet, vigorously beat the dough in the pot for 10 minutes until it becomes translucent and separates from the sides of the pot.
- 3 Beat with a pestle, not a whisk; the asida must be tough enough to be drawn into threads to be considered correct.
- 4 Pour the dough onto a plate and create a round hole in the center using the wet spoon.
- 5 Pour melted butter and honey into the hole, sprinkle with roasted almonds, and eat by picking up pieces and dipping them in the middle.

Replace the butter melting step in step 5: toss the butter in a small bowl at 400 W for 60 seconds, stirring occasionally, then pour it along with the honey into the flour mixture; step 2 still requires whisking on the stovetop for a full 10 minutes to achieve the desired asida consistency.
