Method
- 1 Soak ground almonds in 600 ml of water for 2 hours, then strain through a cloth to extract the almond milk.
- 2 This drink contains no cow's milk; all its whiteness and richness come from almond milk.
- 3 Mix the cornstarch into the cooled almond milk until completely dissolved before heating it on the stove.
- 4 Heat and stir continuously for 10 minutes until the mixture thickens and becomes clear.
- 5 Add sugar and thinly sliced orange peel, then simmer for another 2 minutes and remove the peel.
- 6 Pour into molds, refrigerate for 4 hours, invert onto a plate, and sprinkle with cinnamon and crushed pistachios.

Replace step 4: In a wide bowl, heat the almond milk and cornstarch mixture for 6 minutes, stopping stirring at minutes 2 and 4; reduce to about 4 minutes, as the bottom is not exposed to direct heat, so it's less likely to burn and only needs stirring twice instead of continuously. In step 5, add the sugar and orange zest and heat for another 90 seconds.
