Method
- 1 Marinate thinly sliced pork shoulder with achiote, ground dried chili peppers, and vinegar for 8 hours.
- 2 Stack the meat slices into a block, then pan-fry the entire block for 15 minutes and slice thinly.
- 3 Stacking them into blocks and then slicing them is a way to mimic the al pastor grill in a home kitchen.
- 4 Using two flatbread tortillas stacked on top of each other with cheese in the middle is the difference between a taco al pastor and a corn tortilla.
- 5 Pan-fry the cheese sandwich for 2 minutes on each side until the cheese melts.
- 6 Unwrap the pastry, stuff it with grilled meat and pineapple, then cut it into quarters and serve with onions, cilantro, and lime.
With an appliance
-
Air fryer 59 min
Replace step 5: spray oil and brush butter on both sides of the cheese sandwich, fry in an air fryer at 190 degrees for 6 minutes, flip at the 3rd minute to melt the cheese; step 6 still has the meat and pineapple filling open.
