My Tho Rice Noodle Soup

1 hr 15 min Hands-on time
MediumDifficulty
5 stepsSteps

Method

  1. 1 Simmer pork bones for 60 minutes with roasted radish and onion, skimming off the foam to keep the broth clear.
  2. 2 Boil the lean pork and liver until cooked through, then slice them thinly.
  3. 3 Steam the shrimp until just cooked, peel them, and cut them in half.
  4. 4 Blanch the rice noodles and bean sprouts in boiling water, then place them in a bowl.
  5. 5 Arrange the meat, liver, and shrimp on top, pour in the broth, and sprinkle with chives and fried onions.

With an appliance

  • Pressure cooker 50 min

Replace step 1: simmer pork bones with radish and roasted onions under high pressure for 18 minutes, then release pressure naturally for 12 minutes, and then strain thoroughly. The meat, liver, and shrimp in steps 2 and 3 should still be cooked separately to avoid overcooking.
