45 min Hands-on time + 4 hr soaking or marinating first
MediumDifficulty
5 stepsSteps

Method

  1. 1 Soak mung beans for 4 hours, then steam them until cooked, keeping the beans whole (do not mash them).
  2. 2 Knead the glutinous rice flour with warm water until it forms a smooth, pliable dough.
  3. 3 Roll the dough into a thin sheet, then sprinkle steamed mung beans on top.
  4. 4 Fold the dough in half to wrap around the bean, then place it on a softened banana leaf.
  5. 5 Steam for 15 minutes, then sprinkle grated coconut mixed with palm sugar on top before serving.

With an appliance

  • Pressure cooker 38 min

Replace step 5: steam the mung bean dumplings at low pressure for 8 minutes, then quickly release the pressure; steps 1–4 and the coconut and sugar mixture remain unchanged when serving.
