Tarte aux fraises

2 hr Hands-on time + 3 hr soaking or marinating first
MediumDifficulty
6 stepsSteps

Method

  1. 1 Knead the flour with cold butter, powdered sugar, and one egg, then refrigerate for 2 hours.
  2. 2 Roll out the dough in the mold and bake for 25 minutes until the crust is golden brown and completely dry.
  3. 3 Cook the custard with milk, egg yolks, sugar, cornstarch, and vanilla for 10 minutes.
  4. 4 Spread a thin layer of apricot jam on the bottom of the pastry before adding the cream; this acts as a moisture barrier.
  5. 5 Without jam, the cream softens the bottom of the cake in just one hour.
  6. 6 Pour the cooled custard into the pan, then arrange the halved strawberries in a spiral pattern and spread jam on top.

With an appliance

  • Air fryer 1 hr 40 min

For step 2: spray oil on the surface of the strawberry crust, place a heavy object on it, and bake at 195 degrees in a hot air oven for 16 minutes, rotating the mold halfway through; the crust browns quickly, and large molds may need to be divided into two cakes.
