Method

  1. 1 Peel the shrimp, leaving the tails intact, remove the vein along the back, and pat them dry.
  2. 2 Marinate the shrimp with minced garlic, pepper, crushed coriander roots, soy sauce, and oyster sauce for 10 minutes.
  3. 3 Coat the shrimp with a very thin layer of tapioca starch.
  4. 4 Fry the shrimp in hot oil for 3 minutes until the outer shell is crispy and the shrimp curl up, then remove and drain.
  5. 5 Sauté the remaining minced garlic for 1 minute until golden brown and crispy, sprinkle over the shrimp, and arrange on lettuce leaves.

With an appliance

  • Air fryer 24 min

Replace step 4: spray oil onto the flour-coated shrimp, fry at 200 degrees for 7 minutes, flipping at the 4th minute; step 5 still involves sautéing the garlic separately in a pan, then sprinkling it over the shrimp to prevent the garlic from burning and becoming bitter.
