Nikuman

1 hr Hands-on time + 1 hr soaking or marinating first
MediumDifficulty
6 stepsSteps

Method

  1. 1 Mix the flour with the yeast, sugar, and warm water, then knead for 10 minutes until a smooth, elastic dough is formed.
  2. 2 Cover the dough and let it rise for 60 minutes until it doubles in size.
  3. 3 Soak shiitake mushrooms until soft, chop them finely, and mix them with ground pork, onion, ginger, soy sauce, and sesame oil.
  4. 4 Divide the dough into equal portions, roll out the edges thinly, wrap the filling inside, and twist the edges to seal.
  5. 5 Let the dough rise for another 15 minutes to lighten it, lining the bottom with parchment paper.
  6. 6 Steam over medium heat for 15 minutes, being careful not to open the lid midway or the cake will collapse.

With an appliance

  • Pressure cooker 55 min

Replace step 6: steam the cake under low pressure for 8 minutes, then release the pressure naturally for 5 minutes, without opening the lid midway; steps 1–5 remain the same.
